• Cold water, for cooking potatoes
• 2 TBSPSUnsalted butterdivided
• 1 TBSPCanola oil
• 1/2 Yellow onionthinly sliced
• 8 OZSCremini mushroomsstemmed, quartered
• 1 Red bell pepperseeded, diced
• 1 TSPFresh oreganochopped
• 1 CupCherry tomatoeshalved
• 4 Large eggs
• 1 TBSPFresh parsleyminced
• Salt and pepper to taste
