Ingredients

• 2 large sweet potatoes (about 2¼ pounds)
• 4 tablespoons unsalted butter, softened
• 1 cup plus 2 tablespoons packed light brown sugar
• 1 large egg, at room temperature
• 3 large egg yolks, at room temperature
• 1 teaspoon vanilla extract
• ¼ teaspoon salt
• ¾ teaspoon ground cinnamon
• ½ teaspoon ground nutmeg
• ⅛ teaspoon ground cloves
• ⅛ teaspoon ground ginger
• 1 cup evaporated milk
• 1 9-in deep-dish frozen pie crust (no need to thaw) or homemade pie crust
• 1 cup heavy whipping cream, cold
• 2 tablespoons Confectioners' sugar
