Vegan Apple Cake - Vegan Baking - ZardyPlants

Ingredients

• 500g (about 3 cups) unbleached all purpose flour (see note 1)
• 1 cup coconut sugar (can reduce, see note 2)
• 1 + 1/2 tbsp baking powder
• 1 + 1/2 tsp cinnamon
• 3/4 tsp salt
• 1 cup unsweetened applesauce
• 3/4 cup orange juice (fresh squeezed preferred)
• Juice of 1 medium lemon, optional but awesome
• 4 flax eggs (1/4 cup ground flaxseed + 3/4 cup water)
• 2 tsp vanilla extract
• 4 cups sliced or grated apples (2-3 large apples) (see note 3)
