Ingredients

• - 2 onions, finely chopped
• - 3 stalks of celery, finely chopped
• - 2 carrots, finely chopped or shredded
• - 2 tablespoons of bacon drippings
• - 3 quarts of ham stock or water
• - Ham bones or scraps
• - 1 pound of dry lentils
• - salt and pepper to taste
