  • 1 large Smoked ham hock
  • 1 large Yellow onion
  • 2 stalks Celery
  • 1 large Carrot
  • 6 cloves Garlic
  • 2 Bay leaves
  • 1 tsp Black peppercorns
  • 4 sprigs Thyme
  • 10 cups Water
  • 1 small head Green cabbage
  • 2 tbsp Neutral oil
  • 2 tbsp Tomato paste
  • 1 tbsp Stone-ground mustard
  • 2 tbsp Apple cider vinegar
  • 1 tsp Fish sauce
  • 1 tsp Kosher salt
  • 1/2 tsp Freshly ground black pepper
  • 1/4 tsp Crushed red pepper flakes
  • 1 large Granny Smith apple
  • 1/3 cup Rice vinegar
  • 1/3 cup Water (for pickle)
  • 1 tbsp Sugar
  • 1/2 tsp Kosher salt (for pickle)
  • 1 tsp Hot sauce
  • 1 cup Cooked cornbread
  • 2 tbsp Unsalted butter
  • 1/2 tsp Smoked paprika
