Homemade Ketchup - A Duck's Oven

Ingredients

• 1 sweet onion (roughly chopped)
• 2 celery stalks (roughly chopped)
• 2 tbsp olive oil
• 2 tsp chili powder
• 1 tsp paprika
• 1/2 tsp cayenne pepper
• 1/4 tsp ground ginger
• 1 1/2 tsp minced garlic
• 2 tsp Italian seasoning
• 2 lbs roma tomatoes (roughly chopped)
• 3/4 cup cold water
• 1/2 cup apple cider vinegar
• 1/4 cup brown sugar
