Ingredients

• 1 prepared pie crust
• 1 tablespoon olive oil
• 3 leeks (trimmed and sliced thin)
• 1/2 teaspoon tarragon
• 1/4 cup water
• salt and pepper to taste
• 3 eggs
• 1 cup half and half
• 2 cups shredded Gruyere cheese
