Corn And Sun-Dried Tomato Chowder

Ingredients

• 1/4 c tomato Chopped
• 1 md Yellow onion diced
• 2/3 c Sun-dried tomatoes
• 1 Baking potato peeled and
• 1 ts Salt
• 3 Stalks celery diced
• 1 tb olive oil
• 2 Garlic minced
• 24 oz frozen corn kernels
• 1 Leek with thick green top, halved lengthwise and
• 1 tb fresh thyme Chopped
• 3 c Vegetable stock or water
• 2 c Warm water
