Pickled cucumber and tuna salad - Aceline

Ingredients

• 1 Small cucumber, finely sliced
• ½ red onion, finely sliced
• 2 tbsp sugar (Lamb brand)
• 3 tbsp white wine vinegar or rice vinegar
• 1 lime, zest and juice
• 1 red chilli, finely sliced
• 2 tbsp olive oil (Borges)
• 1 tbsp white wine vinegar
• 1 clove garlic, crushed
• Salt and pepper
• 1 heaped tsp whole grain mustard (Maille/ Colmans)
• Squeeze lemon juice
• 1 bag baby spinach leaves
• 8 small Jersey potatoes, boiled and halved
• 1 bunch fresh asparagus, trimmed and blanched
• 2 eggs, hard boiled (Coccodi)
• 2 tins tuna in oil (Blue angel)
