- 1 courgette, cut into 2mm thick slices lengthways
- 2 tbsp olive oil
- 250g pack Tesco Finest mixed baby tomatoes, halved
- ½ cucumber, diced
- 100g red grapes, halved
- 1 medium avocado, diced
- 100g reduced-fat salad cheese, cubed
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- ½ tsp sugar
- 2 fresh mint sprigs, leaves picked and chopped
