Spinach & Mushroom Lasagna - A better choice!

Ingredients

• LASANGA:
• Packet of soft lasagna sheets
• 1 tub of ricotta
• 2 cups of fresh baby spinach
• 3 cups shredded mozzarella cheese
• 3/4 cup grated Parmesan
• 2 tablespoons chopped fresh parsley leaves
• SAUCE:
• 1/4 cup unsalted butter
• 2 cloves garlic, minced
• 1 cup swiss brown mushrooms, thinly sliced
• 1 brown onion, diced
• 1/4 cup plain flour
• 3 cups milk
• 1 teaspoon chopped basil
• 1/2 teaspoon chopped oregano
• Salt & pepper to taste
