Ingredients

• 500g beef mince
• 1 onion, chopped
• 2 garlic cloves, minced
• 1 tbsp ginger, grated
• 2 tbsp curry powder
• 1 can diced tomatoes (400g)
• 1 cup beef stock
• 1 cup red lentils, rinsed
• 1 cup coconut milk
• Salt and pepper to taste
