Broccoli Cheese Soup Gelson's

Ingredients

• 2 Tbsp butter
• 1 small onion, diced medium
• 1 cup carrots, peeled and diced medium
• 3 cups broccoli, chopped into bite-size pieces
• 2 cloves garlic, minced
• 2 Tbsp flour
• 2 cups vegetable or chicken broth
• 1 tsp fresh thyme
• Salt, to taste
• Black pepper, to taste
• 1 ½ cups cream
• 1 ½ cups sharp cheddar cheese
• ½ cup fresh parmesan cheese
