Hot Marmalade Pudding - Cooking Pete
Warm, fluffy hot marmalade pudding made with brown breadcrumbs and marmalade, served with optional Drambuie custard. Perfect for winter gatherings!
Ingredients
- For the hot marmalade pudding:
- 150g Fine brown breadcrumbs
- 25g Self-raising wholemeal flour
- 120g Soft light brown sugar
- 120g Butter, plus extra for greasing
- 175g Coarse-cut marmalade
- 3 large Eggs
- 1 tsp Bicarbonate of soda
- For the Drambuie custard:
- 300ml Whipping cream
- Half Vanilla pod, split and the seeds scraped out
- 3 Egg yolks
- 30g Caster sugar
- 3 tbsp Drambuie
