Orange Juice & Olive Oil Cake with Pine Nuts from Apples for Jam by Tessa Kiros
I like making this in two small moulds — they look good together and you can take one to a friend. I just love what’s in it and I love it when my kids eat thing
Ingredients
- 1 teaspoon vanilla extract
- 4 eggs, separated
- 50 g(1¾ oz) light brown sugar
- 250 g(9 oz) caster (superfine) sugar
- 400 g(14 oz/3⅓ cups) plain (all-purpose) flour
- 200 ml(7 fl oz) olive oil
- 250 ml(9 fl oz/1 cup) freshly squeezed orange juice (juice of about 4 oranges)
- 1 heaped teaspoon baking powder
- finely grated rind of 1 orange
- 40 g(1½ oz) pine nuts
