- ⅔ cup freshly squeezed lemon juice, from 8-10 lemons
- ⅔ cup Colavita Premium Selection Extra Virgin Olive Oil
- 6 cloves of garlic, peeled and minced
- 2 tbsp fresh oregano leaves, chopped – more as garnish
- 2 tsp chopped rosemary
- 1 tsp Kosher salt
- 4 Cornish game hens (about 1pound each), rinsed and pat-dried thoroughly with paper towels
- 8 large shallots, quartered
