• 5 pounds russet potatoes, peeled, cut into chunks
• 2 large bay leaves
• 1 stick butter, melted
• 1 8 oz. container sour cream
• 1/2 cup milk
• 1 1/2 teaspoons fine sea salt
• black pepper to taste
• 1 heaping cup grated white cheddar cheese
• 2/3 cup panko breadcrumbs
• 1/3 cup butter, melted
• 1/3 cup grated Parmesan cheese
