• 4 North Carolina sweetpotatoes, sliced into 5mm rounds
• 2 tbsp olive oil
• 1 tsp chilli powder
• 1 tsp smoked paprika
• 1 tsp oregano
• ½ tsp salt
• ½ chopped white onion
• 1 diced red pepper
• 2 diced tomatoes
• 1 can kidney beans
• 1 can sweetcorn
• 1 tbsp fresh chopped coriander
• 1 tbsp sliced jalapeño
• 3 tbsp sour cream
