Ingredients: 1 3/4 to 2 pounds tilapia fish fillets (4 fillets, or other white fish fillets, such as cod, haddock, pike, sole, etc.); sea or kosher salt, to taste; ground black pepper, to taste; 4 tablespoons olive oil (divided); 5 tablespoons butter (divided); 1 cup all-purpose flour (for dredging); 1 lemon, sliced thin; 1 lemon, juiced (3 tbsp.); 2 to 3 large shallots, finely chopped; 4 garlic cloves, finely chopped; 1/2 cup white wine; 2 to 3 tablespoons capers (drained, I like using the larger quantity, but it's up to your taste); 3 tablespoons chopped fresh parsley; sugar (pinch or two, if required)
