- 1 Tbsp dark brown sugar
- 1 Tbsp cocoa powder, sifted
- 520g (2 cups) low-fat vanilla yoghurt
- 1 tsp vanilla extract
- Finely grated zest of 1 lime
- 60ml (¼ cup) boiling water
- 2 tsp powdered gelatine
- 2 eggwhites (from 50g eggs), at room temperature
- 80g (1⁄3 cup) caster sugar
- 2 Tbsp thick vanilla yoghurt
- Extra lime zest, to serve
