Sweet Potato Noodles with Almond Sauce

- Almond Sauce
- 2 tablespoons extra-virgin olive oil
- 3 shallots, minced
- 2 garlic cloves, minced
- 3 tablespoons all-purpose flour
- 2 cups plain, unsweetened almond milk
- 2 tablespoons Dijon mustard
- Salt and freshly ground black pepper
- Sweet Potato Noodles
- 3 sweet potatoes, cut into noodles ( made using a spiralizer )
- 4 cups roughly torn kale
- ½ cup toasted, salted almonds, roughly chopped
