- 12 large shrimp in the shell
- 1 small onion, coarsely chopped
- 2 tablespoons olive oil
- 2 pounds (900 g) shrimp shells
- 6 small ripe tomatoes (1 pound; 450 g), cored and coarsely chopped
- 2 teaspoons tomato paste
- 2 cups (500 ml) dry white wine
- 1 sprig tarragon
- 2 tablespoons mild paprika
- 1 cup (250 ml) heavy cream
- 5 teaspoons kosher salt
- Hot red pepper sauce, to taste
- Fresh lemon juice, to taste
- 6 tablespoons (50 g) all-purpose flour
