Ingredients

  • ⅓ cup (80 ml) Cognac or brandy
  • 1 small rib celery, coarsely chopped
  • 1 medium clove garlic, smashed and peeled
  • 2 whole cloves
  • 1 sprig thyme
  • 1 small carrot, peeled and coarsely chopped
  • 5 tablespoons (79 g) unsalted butter
  • 12 large shrimp in the shell
  • 1 small onion, coarsely chopped
  • 2 tablespoons olive oil
  • 2 pounds (900 g) shrimp shells
  • 6 small ripe tomatoes (1 pound; 450 g), cored and coarsely chopped
  • 2 teaspoons tomato paste
  • 2 cups (500 ml) dry white wine
  • 1 sprig tarragon
  • 2 tablespoons mild paprika
  • 1 cup (250 ml) heavy cream
  • 5 teaspoons kosher salt
  • Hot red pepper sauce, to taste
  • Fresh lemon juice, to taste
  • 6 tablespoons (50 g) all-purpose flour
