Ingredients

• 1/2 an onion, chopped
• 2 carrots, peeled and sliced
• 1/2 red pepper, chopped
• can of sweet corn, drained and rinsed
• can of sweet peas, drained and rinsed
• can of butter beans, drained and rinsed
• 1/2 cup green beans (mine were leftovers)
• 4 1/2 cups vegetable juice cocktail (big can)
• 2 1/2 cups water
• 1 1/2-2 cups pasta (I used penne, but whatever you’ve got works)
• pepper to taste
• 1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional)
