Pineapple Mint Mojito

Ingredients

• 1 1/4 ounce Light rum
• 1 1/4 ounce Pineapple juice
• 1 1/4 ounce lime juice
• 1 dash agave syrup
• 1 dash pineapple mint shrub see recipe below
• 1 splash seltzer water
• 6 leaves mint
• 1 sprig mint
• 1 wedge pineapple
• 2 cups pineapple chunks
• 1 3/4 cups apple cidar vinegar
• 1 cup unrefined cane sugar raw
• 1 cup mint leaves packed
• 1 cup lime juice
