Ingredients

• 100g Ontario cow's milk Feta
• 1 cup Ontario whipping cream
• 1 eggplant, diced
• 1/2 cup olive oil
• 1 red onion, diced
• 1 carrot, diced
• 5 cloves garlic, finely minced
• 3 green chilis, finely minced
• 1 cup crushed tomatoes
• 1 tsp cumin, ground
• 1 tsp coriander, ground
• 1 tsp cardamom, ground
• 1 1/2 tsp salt
• 3 tbsp sugar
• 1/3 cup white vinegar
• 1/4 bunch parsley, finely chopped
• 1/4 bunch mint, finely chopped
