- 250g butter
- 1 cup castor sugar
- 2 eggs
- 2 tablespoon oil
- 2 teaspoon vanilla essence
- 2 ½ teaspoon baking powder
- Flour (enough for a soft dough)
- Add eggs one at a time.
- Add oil,vanilla essence & baking powder.
- Add flour..
- Add apricot jam and grate the rest of the dough on top.
