Apple Spice Loaves

Ingredients

• 3-4 apples, McIntosh or any other variety, enough to total 2 Cups grated
• 1/4 cup water
• 1 cup molasses
• 2 tsp baking soda
• 3 cups flour
• ½ tsp salt
• 2 tsp ground ginger
• 2 tsp ground cinnamon
• 1 tsp ground cloves
• 1 tsp ground allspice
• 1/4 tsp ground cardamom
• 1 1/2 tsp baking powder
• 3 eggs
• 2/3 cup white sugar
• 2/3 cup demerara brown sugar
• 2/3 cup canola oil
• ½ tsp almond extract
• ½ tsp star anise extract (if available, or sub vanilla)
