Ingredients

• 2 pounds sweet potatoes/yams
• 1/2 cup butter
• 1 tsp. cinnamon
• 1/4 tsp. ginger
• 1/2 tsp. salt
• 1/4 tsp. nutmeg
• 2 tbsp. white sugar
• 1 cup brown sugar
• 3 large eggs, separated
• 1/2 cup orange juice
• 1 tbsp. grated orange rind
• 1/2 cup evaporated milk
• 1 unbaked pie shell
