- ½ cup desiccated coconut
- 1 teaspoon coconut essence
- 100g palm sugar, chopped
- pinch salt
- 100ml water
- 1 tablespoon rum
- 1/3 cup coconut milk
- 4 large ripe bananas, halved lengthways
- 60g melted butter
- 2 tablespoons brown sugar
- toasted desiccated coconut to serve
