• 1 box Camellia Brand Creole Red Bean Seasoning
• Chopped onions, celery, bell pepper, and garlic , however much your heart desires
• 2 tablespoons oil
• 1 (1-pound) package smoked sausage
• 2 pounds pickled pig tips (see preparation below)
• 4 bay leaves
• 1 teaspoon salt
• 1 tablespoon onion powder
• 1 tablespoon garlic powder
• 1 tablespoon Crystal hot sauce (or your favorite brand)
• 1 stick butter
