Sweet & Sour Cabbage Beet Soup with Bacon - Seward Community Co-op

Ingredients

• Olive oil for sautéing
• 4 bacon slices, cut into bite-size pieces
• 2 onions, finely chopped
• 1/2 head of green cabbage
• 1 beet, peeled and cut into matchstick pieces
• 1 apple, peeled, cored & finely chopped
• 2 tbsp apple cider vinegar
• 2 tbsp brown sugar
• 2 cloves
• 1/4 grated nutmeg
• 5 cups vegetable stock
