Ingredients

• 4 Tablespoons butter
• 1 7 oz can chipotles in adobo
• 1 cup red onion, diced
• 8 cloves garlic, minced
• 1 teaspoon cumin powder
• 4 cups chicken broth
• 1-1/2 pounds leftover grilled chicken, diced into bitesize pieces
• 8 oz cream cheese
• 3 cups cojack cheese, shredded (we used Boar's Head triple pepper cojack)
• 1/2 cup fresh cilantro, chopped
