Ingredients

• 1 1/2 quantity sweet short crust pastry (see above for link to recipe)
• 120 g dark chocolate buttons (or slab roughly chopped)
• 250 g fine sugar (divided (see recipe))
• 1/2 teaspoon lemon juice
• 60 g unsalted butter
• 300 ml double cream (at room temperature)
• 1/2 teaspoon fine sea salt
• 4 egg yolks
• 1 whole egg
