• 1 pound sweet potatoes (peeled and coarsely grated)
• 1 to 2 carrots, (finely grated)
• ½ bunch cilantro (finely chopped)
• 3 scallions (green onions) (finely chopped)
• ½ cup all-purpose flour
• 2 large eggs (lightly beaten)
• ½-inch piece peeled ginger (finely diced)
• ¾ tsp salt
• ½ tsp black pepper
• pinch of cinnamon
• ½ cup vegetable oil (plus more as needed)
