Marbled Coffee Cake | Saveur
Austrian bakers make this coffee cake with a gugelhupf mold, but we've found that a bundt cake mold works just as well.
Ingredients
- 17 tbsp. unsalted butter, softened
- 1 <sup>3</sup>⁄<sub>4</sub> cups flour
- 2 oz. semisweet chocolate, preferably 54%, roughly chopped
- 2 tbsp. dark rum
- 3 tbsp. cornstarch
- <sup>1</sup>⁄<sub>2</sub> tsp. salt
- <sup>1</sup>⁄<sub>2</sub> cup confectioners' sugar, plus more for dusting
- 2 tbsp. lemon zest
- 1 tbsp. vanilla extract
- 5 eggs, separated
- 1 cup sugar
