Ingredients

  • 1.5 cup ( 160 gr ) oat flakes
  • 1 cup ( 140 gr ) white almonds, pulsed or roughly chopped
  • 1/2 cup ( 60 gr ) dark chocolate chips
  • 1/2 cup ( 75 gr ) raisins or dried cranberries
  • 1 cup ( 200 gr ) peanut butter
  • 1/2 cup ( 180 gr ) honey
  • 2 tbsp ( 10 gr ) coconut oil, melted
  • 1/4 tsp salt
  • In a large bowl mix the oat flakes along with the almonds, chocolate chips and raisins (or the dried cranberries). Set aside.
  • In the bowl with the oat mixture add the warm peanut butter mixture and mix well until combined using a rubber spatula.
  • Cover a 20cm (8 inch) square pan with plastic wrap. Let enough plastic warp at the edges of the pan in order to cover afterwards the bar's mixture with the plastic wrap.
  • The oat bars can be stored in an airtight container in the refrigerator for up to one week. You can also wrap each bar with plastic wrap, store it in the refrigerator and have it ready to go.
  • You can substitute the peanut butter with any nut butter you like. However if you do not use peanut butter you will loose the snickers-like taste of these bars.
  • You can substitute the almonds with any unsalted nuts you like, like hazelnuts or peanuts.
  • For vegan version of the recipe substitute the honey with equal quantity of maple syrup.
