- ½ cup butter (softened)
- ½ cup date sugar (or coconut sugar)
- ½ cup Monk Fruit Sweetener (or Monk Fruit sweetener)
- 1 whole egg
- 1 teaspoon Vanilla
- 1 cup einkorn flour (all purpose flour)
- ½ teaspoon baking soda
- 1 teaspoon Baking powder
- ½ teaspoon Celtic Sea Salt
- 1 cup oats (old fashioned)
- 3 ½ ounces Chocolate Chips (I like the HU brand sweetened with only dates)
