Apple Spice Cake with Brown Sugar Icing • Kroll's Korner

Ingredients

• 2 1/4 cup all purpose flour, spooned and leveled
• 1 1/2 tsp. baking soda
• 1 tsp. salt
• 1 tsp. ground cinnamon
• 1/2 tsp. ground ginger
• 1/2 tsp. ground nutmeg
• 1/2 tsp. ground allspice
• 1/8 tsp. ground cloves
• 2/3 cup vegetable oil
• 2 large eggs, room temperature
• 3/4 cup brown sugar, packed (light or dark)
• 3/4 cup granulated sugar
• 1/2 cup sour cream, room temperature
• 1 tsp. pure vanilla extract
• 2-3 large honey crispy apples, grated using the large holes on a box grater, ~1 1/2 cups (can keep the skin on)
• 1/4 cup salted butter
• 1/2 cup dark brown sugar, packed
• 2 Tbsp. heavy cream
• 1/2 tsp. pure vanilla extract
• 1 cup powdered sugar, sifted
