Tater Tot Breakfast Casserole with Sausage - Hatfield

Ingredients

• 1 Country Ground Sausage or Sweet Italian Ground Sausage
• 16 oz. bag frozen tater tots
• 1 medium onion, finely diced
• 6 large eggs
• ½ cup heavy cream
• 1 cup milk
• Salt and pepper, to taste
• ¼ tsp. cayenne pepper
• 3 cups shredded cheese (cheddar or pepper jack), set aside 1 cup for the top of the casserole.
