Toll House Cookies

Ingredients

• 1 cup butter
• 3/4 cup sugar
• 3/4 cup brown sugar
• 2 eggs
• 1 teaspoon vanilla (if not milling with the wheat)
• Mill 350 grams soft wheat with 2 inches of chopped vanilla bean or 2 1/4 cup unbleached or whole wheat pastry flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 cup chopped toasted walnuts (about 8 ounces, optional)
• 1 cup chocolate chips (about 6 ounces)
