Alice Springs Chicken – TartAmour

Ingredients

• 4 boneless, skinless chicken breasts
• 1 cup Dijon mustard
• 1 cup honey
• 1 tablespoon vegetable oil (for the marinade)
• 1 teaspoon lemon juice
• 1/2 teaspoon salt
• 1/2 teaspoon paprika
• 1/8 teaspoon cayenne pepper
• 1 pound bacon, cooked and crumbled
• 1 cup mushrooms, sliced
• 2 cups shredded colby-monterey jack cheese blend
• 2 tablespoons chopped fresh parsley (optional for garnish)
• 2 tablespoons butter
• Salt and pepper to taste
