- 1/2 cup mayo
- 1 tbs dijon mustard
- 2 eggs
- 1/4 cup bread crumb, plus more for breading
- zest 1 lemon
- 1 stalk celery, diced finely
- 1/4 yellow onion, diced finely
- 1 tbs fresh chopped herbs, such as parsley and tarragon
- 1 tspn old bay seasoning
- salt to taste
- fresh ground black pepper to taste
- Oil for shallow frying
