• 1 1/4 lbs Chicken, breast, about 2 breasts, skinless and boneless
• 1 1/2 Cups Rice, long grain white rice
• 10 Oz Broccoli, 1 and 1/2 cup, cut into florets, fresh or frozen
• 2 Cups Chicken Stock
• 3 tbsp Olive Oil, for more flavor, replace 1 tbsp oil with unsalted butter
• 3 Green Onion, green and white diced, divided
• 1-2 Red Bell Pepper, roasted, small diced, optional
• 1/2 tbsp Garlic, 2-3 cloves, minced
• 1/2 Cup Parmesan Cheese, grated
• 1 1/2 Cups Cheddar Cheese, grated
• Fresh Herbs, few sprigs thyme and 3-4 tbsp parsley
