• 1 small yellow onion (chopped)
• 2-3 garlic cloves (minced)
• 8 oz 250g button mushrooms (chopped)
• 1 bell pepper (diced)
• 1 cup 115g shredded red cheddar cheese (divided)
• 2 tablespoons fresh parsley (chopped, for garnish)
