• 1/2 cup light brown sugar
• 1/2 cup granulated sugar
• 2 Tbsp flour
• 3/4 tsp cinnamon
• 1/2 tsp nutmeg
• 1/8 tsp salt
• 6 cups thinly sliced, pared apples
• 1 1/2 tsp grated lemon peel
• 2 Tbsp butter
• 1 egg yolk
