Sloppy joe jacket potatoes

Ingredients

• 4 potatoes, unpeeled
• 1 tablespoon olive oil
• 1 brown onion, chopped finely
• 1 clove garlic, crushed
• 1 carrot, chopped finely
• 1 red capsicum, chopped finely
• 1 stalk celery, trimmed, chopped finely
• 500 grams minced beef
• 1 tablespoon mild american mustard
• 1/2 cup (125ml) tomato sauce
• 1/3 cup (80ml) beef stock
• 1 tablespoon finely chopped fresh flat-leaf parsley
