• .75 cup unsalted butter, chilled and cut into ½-inch cubes
• 2.25 cup all-purpose flour
• 0.25 cup cornmeal
• 1 tsp salt
• 1.75 tsp baking powder
• 0.5 tsp baking soda
• 1 tsp sugar
• 1.25 cup full-fat sour cream
• 1 tbsp 35% cream
• 2 tbsp demerara sugar
• 1 lb PEI strawberries, hulled and quartered
• 3 tbsp granulated sugar
• 1 lemon, zested
• 1 tbsp fresh lemon juice
• 1 cup 35% cream
• 2 tbsp icing sugar
• .5 tsp vanilla extract
• pinch salt
