• - ½ cup high quality creamy queso sauce
• - 2 poblano peppers
• - ½ red onion, cut into ½ inch strips
• - ½ cup Roma tomatoes, ¼ inch diced
• - 1 tbsp fresh cilantro, finely chopped
• - ¼ cup yellow onions, ¼ inch diced
• - 1 tbsp lime juice
• - Salt & pepper
