• 500 g minced (ground) beef (see note 1)
• 250 g minced (ground) pork (see note 1 for substitutes)
• 1 brown onion, grated (see note 2)
• 65 g breadcrumbs
• 1 tsp sea salt flakes
• ½ tsp freshly cracked black pepper
• 1 egg
• 1 tbsp freshly grated parmesan (optional)
• 1 tbsp freshly chopped flat-leaf parsley (optional)
• 2 tbsp olive oil
• 6 cloves garlic, finely chopped
• 700 g passata
• 375 ml chicken stock
• 1 tsp white sugar (optional)
• ½ tsp sea salt flakes
• 125 g freshly grated cheddar or mozzarella
