White Bean Chicken Chili

Ingredients

• 2 tbsp olive oil
• ½ medium onion, diced
• 1 tbsp minced garlic
• 7 oz can diced chili's
• ¼ tsp paprika
• 1 ½ tsp cumin
• 1 tsp thyme
• 1 tsp chili powder
• ½ tsp salt or to taste
• ½ tsp black pepper
• 1 bay leaf
• 1 pound shredded cooked chicken
• 2 cups frozen corn, thawed
• 2 14oz cans cannellini beans, drained and rinsed
• 4 cups chicken broth
• ½ cup sour cream
• 2 tbsp cornstarch
• 2 tbsp water
